Vegan Chocolate Pudding Parfait

Simply Delicious Vegan Lupin Blueberry Muffins

Delicious and Healthy, these nutrient dense muffins packed with fiber and protein are made every week in my house. Make these for an easy on-the-go breakfast or even healthy snack!

Serving Size:  12          Prep Time:   5 minutes         Cook Time:   30-35 minutes

Ingredients

Instructions

  1. Mix all dry ingredients in medium bowl.
  2. Add in water and blend until well-combined. 
  3. Fold in blueberries.
  4. Spoon mixture into sprayed/nonstick muffin pan.
  5. Bake for 30-35 minutes, or until toothpick comes out clean
  6. Enjoy warm; Store in air-tight container or keep refrigerated. 

Optional Streusel Topping

  1. 2 TB of vegan butter, room temp but not melted
  2. 2 TB gluten free flour
  3. 1/4 cup + 2 TB organic granulated sugar
  4. Whisk/Blend ingredients 
  5. Sprinkle streusel topping over each muffin prior to baking.

Tips: 

- Add zest of 1 lemon and 1 TB lemon juice when adding water for tasty lemon-blueberry muffins.
