Pumpkin Protein Ice Box Bars

The BEST Vegan Pumpkin Pie Ice Box Pie

Level up traditional Pumpkin Pie with this easy and delicious recipe! High in protein and using simple ingredients, this make ahead dessert will be a tasty recipe you can enjoy (with healthy ingredients you will feel good eating!)

  • 1 can (15 oz) Pure Pumpkin Puree 
  • 100 g  Luptopia Protein Crumbles, cooked
  • 3-5 tsp of sugar free brown sugar substitute
  • 30 g pea protein powder or protein powder of choice
  • 1.5 tsp All Spice
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 c cocoa or vegan chocolate chips (you can also use sugar free dark choc chips)
  • 1 container (9 oz) light non dairy cocowhip


  • 120 g   Luptopia Protein Crumbles (uncooked)
  • 120 g Almond Flour 
  • 3/4 sugar free syrup such as Chocozero caramel (you can also use organic blue agave if you prefer regular sugar)


    1. Preheat over 350 F.
    2. Line baking sheet with parchment paper or coat well with non-stick cooking spray
    3. Mix Luptopia Protein Crumbles and other ingredients for crust and flatten on the baking pan. Bake 15 minutes or until golden brown. Set aside and let cool (SEE TIPS)
    4. Blend  Luptopia Protein Crumbles and all filling ingredients on high until smooth (exclude chocolate chips if using those). Fold in chocolate chips. Once crust is cool, spread pumpkin filling evenly and freeze for 10 minutes.
    5. Top with cocowhip and freeze for 20-30 minutes, or store in airtight container and freeze overnight if making ahead. Set out 5 minutes before serving.

      - If you prefer not to use sugar free, you can easily substitute for organic brown sugar of even organic coconut sugar. Increase amount if you eliminate vegan chips and if you like a sweeter dessert.
