Easy Vegan Chocolate Muffins
Healthy, Gluten Free, Nutrient dense muffins packed with fiber and protein. Make these for an easy on-the-go breakfast or even healthy snack!

💚VEGAN 💚GLUTEN FREE 💚OIL-FREE
- 1 package (12 oz) Luptopia Protein Pancake, Waffle and Muffin Mix
- 1/4 cup cocoa powder
- 1 3/4 cup water
- 1 cup Vegan chocolate chips (or cacao nibs if preferred)
- Mix all dry ingredients in medium bowl.
- Add in water and blend until well-combined. Do not overmix.
- Fold in chocolate chips or cacao nibs
- Spoon mixture into sprayed/nonstick muffin pan.
- Bake for 30-35 minutes, or until toothpick comes out clean
- Enjoy warm; Store in air-tight container or keep refrigerated.
